Puttu (പുട്ട്) is Malayali’s own trademark breakfast dish. The authentic Kerala kitchen puttu make use of brown rice flour. Puttu made of wheat flour (ഗോതമ്പ് പുട്ട് )also is very common, but compared to the rice flour preparation, wheat puttu used to have more sticky-lumps which many people don’t like. The recipe I presented here uses roasted wheat flour, which avoids the lump formation and makes the wheat-puttu, acceptable to all puttu lovers.

Ingredients

  1. Wheat flour     : 2 cups
  2. Coconut           : 1 cup
  3. Water              : 1 Cup
  4. Salt for taste

 Method

  • Dry roast the wheat flour for about 4-5 minutes in a medium flame, stirring continuously to avoid burning at the bottom of the pan.
  • Transfer it to a plate and let it cool completely.
  • Take another big bowl and add a little water along with salt and mix it properly.

Add the wheat flour and add water little by little at a time and mix it gently, Make sure to not knead the mix ,we want to mix it like bread crumbs.

  • Take a mixie jar and keep a little flour at a time and put the mixie in low speed for a second and transfer to a bowl.
  • Do the same process for the entire flour. I had to take 5 turns for the entire mix..
  • Now add half cup of coconut into the flour and mix everything together.
  • In a puttu-maker add some coconut and add the flour and finally add the coconut and close it. You may make it as different layer with coconut in between if you like so.

Steaming the puttu.

  • I used a pressure cooker whistle-port as my base for the puttu-maker. So I filled quarter part of water in it the pressure-cooker and allowed the water to boil.
  • Once the steam starts coning nicely through the whilstle-port, keep the puttu maker into the whistle-port and steam it.
  • Once the puttu is cooked, we can see the steam is coming from the top-holes of the puttu maker, keep steaming it for about 4-5 minutes.
  • Now take the puttu-maker from the pressure cooker and de-mold it gently using the a stick (usually comes with the puttu-maker).

Tips:

While mixing the puttu-flour make sure to wet the flour properly , otherwise it won’t cook well. I used about 1 cup of water, don’t add all water together.
