Beans – Potato mezhukkupuratti

Mezhukkupuratti

Mezhukkupuratti (മെഴുക്കുപുരട്ടി) is a very traditional kerala vegitable side-dish preparation,  that is possible with multiple vegetable options. The preparation uses cut vegetables cooked in oil with minimal masala unlike other Kerala recipes.  This recipe here lists the steps for preparing mezhukkupuratti with cut beans and potato, to have a great & tasty blend of both vegetables.

Ingredients

  1. Beans                : 750 kg
  2. Potatoes : 3 (medium)
  3. Crushed chilli : 1 Tbl- sp
  4. Turmeric powder : ½ T- sp
  5. Oil                : 3 Tbl- sp (adjust)
  6. Sliced onion : 1 (big)
  7. Curry leaves : 2 sprigs

Method

  • Cut the beans into ~1 inch long pieces ( I used  frozen cut beans from grocery store this time)
  • Slice the potatoes into medium sized pieces (see the pic).
  • Heat a pan, add the oil and sauté the onion for less than 1 minute.
  • Then add the beans along with potatoes and sauté it.
  • Add the turmeric powder, salt and crushed chilli.
  • Sauté it for couple of minutes and close pan.
  • Open the lid and stir it in regular intervals, don’t add water into the mix.
  • Check the salt, if needed add some more salt while cooking, Cooking will be faster with closed lid.
  • Once the beans and potatoes are cooked and soft enough, add the curry leaves and mix it well before turning the stove off.
