I got inspiration for this recipe after my last week lunch at Chipotle the Mexican grill restaurant. The rice bowl combines protein-rich black beans with creamy avocado, diced tomatoes and rice and grilled/broiled chicken. This is a great healthy combo for kids and the whole family. Feel free to use this recipe as a jumping-off point. If you prefer steak to chicken, or brown rice to white, sub it. Same with the toppings and seasonings.

Ingredients & Preparation

For salsa:-

  1. Tomato      : 2
  2. Onion       : 1
  3. Jalapeño  pepper  : 2
  4. Cilantro (chopped)      : ¼ Cup
  5. Lemon       : ½
  6. Salt for taste

Method

  • Chopped the tomato, onion and pepper into small pieces.
  • In a bowl add the chopped ingredients.
  • Add enough salt and lemon juice. Mix everything together.

Tips: Adjust the lemon juice according to taste.

For Guacamole:-

  1. Avocado  : 2
  2. Onion : 1
  3. Jalapeño pepper      : 2
  4. Green onion/spring onion   : 1 stem
  5. Cilantro : 5 stem
  6. Salt for taste
  7. Lemon    : ½

Method

  • Chop the onion, jalapeno, green onion and cilantro into small pieces.
  • Take the flush from the avocado and smash it.
  • In a bowl add the avocado and chopped ingredients.
  • Add lemon juice and salt.
  • Mix everything together.

Tips: May adjust the ingredients according to taste.

Corn Salsa:-

  1. Corn  : 1 cup
  2. Onion : 1
  3. Cilantro    : 5 stem
  4. Lemon : ½
  5. Jalapeño pepper   : 2
  6. Salt for taste.

Method

  • Cook the corn (do not overcook).
  • Drain the water and let it cool completely.
  • Chop the onion, pepper and cilantro into small pieces.
  • In a bowl put everything and add the salt and lemon juice.
  • Mix everything together.

Rice:-

  1. Brown rice     : 1 ½ cup
  2. Cilantro : 7 stems
  3. Salt for taste
  4. Lemon    : 1

Method

  • Cook the rice and let it cool completely.
  • Add enough salt, cilantro and lemon juice. Mix it well.

Tips: Adjust the ingredients according to taste. Here I used brown basmati rice.

Chicken:-

  1. Chicken  : ½ kg
  2. Chilli powder  : 2 T sp.
  3. Ginger garlic paste  : 2 T sp.
  4. Paparika powder      : ½ T sp.
  5. Pepper   : 1 T sp.
  6. Lemon  juice                      ½
  7. Salt for taste

Method

  • Cut the chicken into thin slices.
  • Marinate the chicken with the above ingredients.
  • Preheat the oven to broil into high for 10 minutes.
  • Brush the oven safe dish with oil/ butter.
  • Place the chicken in the dish and broil for 10 minutes.
  • After 10 minutes flip the chicken and broil for another 10 minutes.
  • Cut the chicken into bite size.

 For garnishing:-

  • Cut Lettuce into small pieces.
  • Slice the bell pepper.
  • Cook ~ 1½ cup of beans and drain the water add enough salt and mix.
