Masala Peanut

Masala peanuts or masala kadalai, is a deep fried snack with peanut. I still remember having this as evening snack- which my dad used to buy these while returning after work- along with hot tea.  The rich flavor of hot spices and garlic with the aroma of coconut oil makes it a perfect snack, which can be stored in an air tight container for days.  There is some possible healthy alternative to this preparation, by baking instead of oil frying. This recipe explains the conventional oil fried version.

Ingredients

  1. Roasted peanuts     : 1 cup
  2. Chilli powder          : 1 ½ T sp.
  3. Turmeric     : A pinch
  4. Hing (Asfoetida)                  : A dash
  5. Garlic  paste           : ½ T sp.
  6. Crushed garlic        : 3 pods
  7. Besan/ gram flour   : ½ cup
  8. Rice flour    : 2 Tbl sp.
  9. Water for mixing
  10. Salt for taste
  11. Oil for frying
  12. Curry leaves

Method

  • In a bowl add the peanut along with chilli powder, turmeric, hing ,garlic paste, crushed garlic, besan, salt  and rice flour .
  • Then add a little water at a time and mix the ingredients. Water only needs for coating everything on to peanut.
  • Heat oil in a kadai/ pan . Fry the masala coated peanuts in a medium heat.
  • Finally fry the curry leaves, and add to the fried peanuts.

Tips:-
Don’t use raw peanuts, if you have raw peanuts dry roast the peanuts and let it cool completely before preparing.

Take more cautious while adding water to limit to the right level.
