Kerala Duck Roast

DuckRoast

Duck (താറാവ്) dishes are common in mid- Kerala, due to the abundance of the same in that back waters rich region.  Many duck preparations are popular for Christian festival feasts and marriage occasions. In contrast to chicken, Duck and duck egg is generally encouraged in Ayurveda diets due to its know “cold” nature. The recipe here of Duck-Roast is an authentic preparation in Kuttanadu.Ingredients

  1. Duck    :   2.5 Kg

For marinating:-

  1. Chilli powder    : 1Tbl. Sp.
  2. Turmeric powder          : ¼ T sp.
  3. Ginger garlic paste       : 2 T sp.
  4. Garam masala  : ¼ T sp.
  5. Salt for taste

For masala:

  1. Sliced onion (big)          :  3
  2. Green chilly (split)         : 5
  3. Ginger paste     : 1 ½ T sp.
  4. Garlic paste      : 1 Tbl sp.
  5. Chilli powder    : 2 Tbl sp.
  6. Coriander powder         : 1 Tbl sp.
  7. Turmeric powder          : ¼ T sp.
  8. Garam masala  : ½ T sp.
  9. Oil        : 3 Tbl sp.
  10. Pepper powder             : 2 T sp.
  11. Curry leaves use generously
  12. Salt for taste

Method

  • Cut the duck into medium pieces and wash it thoroughly.
  • Marinate the duck with the above ingredients mentioned,  for about 1-2 hours.
  • Keep a pressure cooker on the stove ,add 2 Tbl sp of oil and add the sliced onions and fry it for about 3 minutes, and add salt.
  • Add the ginger garlic paste along with green chilli and fry it until the onions become soft.
  • Add the coriander, chilli, turmeric and pepper powder and fry it about 7-8 minutes in a low flame. (until the masala turn brown in color).
  • Now add the duck pieces and stir it for another 2-3 minutes.
  • Put the pressure cooker lid and wait for 2 whistles ( or until the meat becomes soft).
  • After the pressure released, open the lid, (will see a little water on it).
  • Add the curry leaves and cook it until the water evaporates and the masala fully coated on to the duck pieces.
  • Add the one Tbl sp oil and mix it well.
  • Finally add the Garam masala and mix it properly.

Tips:

  • Use coconut oil for the authentic taste,
  • Using more oil will give more taste.
  • My default recipe is a spicy masala, can adjust chilli level according to your taste.
  • If you are scared of cooking in the pressure cooker without adding water can add ~ ¾ cup of water J.
