Fruit Cake

Fruit cake, a traditional delicacy of Christian cuisines worldwide!, Fruit cake is made with chopped  candied fruit (Tutty-frutti), nuts, and spices, soaked in alcohol (typically Rum, as i used in this preparation). Fruit cakes are often served in celebration of weddings and Christmas. There are multiple recipe ideas around for this cake dish and the one I share here is a traditional one which gets us the authentic taste and flavor.

For a sheet size of  10″ x  7″

Ingredients

  1. All purpose flour (Maida) : 1 ½ cup (+ extra ~1  Tbl-sp for mixing the tutty fruity & some for dusting the pan)
  2. Sugar             : 1 ½ cup
  3. Butter  : 2 sticks  (~ 225 g)
  4. Egg  :  4
  5. Baking powder : ½ T-sp
  6. Cinnamon powder : ½ T-sp
  7. Rum : ½  Tbl-sp
  8. Vanilla essence  : 1 Tsp
  9. Tutti frutti : 1 pkt
  10. Chopped walnuts  : ¼  cup

Method

  • In a big bowl add the butter and sugar, beat it with the help of an electric beater till it is soft and blended nicely.
  • Then add egg one at a time and beat all together. Beat till it is creamy and frothy.
  • Then add the rum along with vanilla essence and mix it with a spatula.
  • In another bowl, add the flour along with baking powder and cinnamon powder; mix it together for getting evenly.
  • Now add the flour mixer into the egg mixture little at a time and mix it gently.
Preparing Batter
  • In a bowl add the 1 Tbl-sp of flour, nuts and tutti frutti & mix it.

  • Add the tutti frutti mix into the flour mixture and bind it well.
  • The batter will be pretty thick; which is the required consistency for preparation.
Ready to Bake
  • Now Preheat the oven into 325 Fahrenheit.
  • In a baking pan grease it with butter and add some flour to coat (dust) the pan; remove any excess flour.
  • Add the batter into the greased pan, filled up to 60 to  70% of the pan depth.
  • Once the oven is preheated, bake the cake for about 25-30 minutes.
  • Testing the cake for proper baking: Insert a toothpick  in the center of the cake. If the toothpick comes clean, the cake is ready, otherwise bake it for some more minutes.
After Baking

Tips:

  • Rum gets the traditional flavor and taste, may avoid if you don’t like to.
  • Egg and butter should be in room temperature.
  • Do not add any water.
  • Try to stick to the exact measurements as mentioned for best taste, but tutti frutti & nuts quantity can be increased for added taste)
