Coconut whether it is good for health or not… Let the debate go on….Here I have a sweet laddu (ladoo / ലഡ്ഡു) preparation with grated coconut. Laddu is an Indian sweet that is often prepared to celebrate festivals or household events such as weddings and also served as traditional Indian households candies. The popularity of Laddu is due to its ease of preparation. Coconut laddu is also very simple and easy recipe to make with the highlight of having very few ingredients.

Ingredients

  1. Shredded coconut        : 6 cup
  2. Condensed milk            : 1 tin (396gm)
  3. Sugar               :  2.5 C
  4. Ghee                :   2 Tbl. Sp.

Method

  • In a kadai/pan add the coconut ,sugar, condensed milk and 1 table spoon ghee, mix everything together.
  • Keep the kadai/ pan on the stove and stir it the mix in medium heat.
  • Keep on stirring until all the moisture evaporated and add another 1 table spoon ghee .
    At this point the coconut mixture will come together and ghee will start oozing from the coconut.
    It will take about 10 minutes.
  • In a greased tray/ plate spread the coconut mixture and wait until it is cooled enough to handle.
  • Take small portions and round it like a ball (laddu).

Tips:

I used readily available shredded coconut packet from Indian Store. If you are making grated coconut yourself, make sure to avoid the brown part in the mix and also make sure to have an even size for the grate.

For extra taste, the laddu may be garnished with cashew or cardamom either separately fried in ghee or added to the  mix
