Another one dish meal from the Chinese cuisine…Chicken Fried Rice is a delicious blend of rice, chicken, egg and specific spices. In this authentic Chicken Fried Rice recipe, you’ll learn: Stir fry secrets to creating flavorful, delicate, authentic Chinese fried rice.


For rice: –

  1. Basmati rice : 3 cup
  2. Water : 4 Cup
  3. Butter : 1 Tbl- Sp
  4. Salt for taste

For chicken: –

  1. Chicken pieces : 3 Cup
  2. Ginger-garlic paste : 2 T- Sp
  3. Pepper powder : 1 ½  T- Sp
  4. Chilli garlic sauce : 1 T- Sp
  5. Soy sauce : ¼ T- Sp
  6. Plain flour : 2 Tbl- Sp
  7. Corn flour : 2 Tbl- Sp
  8. Salt for taste
  9. Egg : ½ egg
  10. Oil for frying

For mixing:-

  1. Finely chopped onion : 1 (small)
  2. Finely chopped garlic : 1.5 Tbl- Sp
  3. Finely chopped ginger : ½ Tbl –Sp
  4. Spring onion : 5 stem
  5. Carrot pieces : ¼ Cup
  6. Bell Pepper pieces : ¼ Cup
  7. Chilly garlic sauce : 1 Tbl- Sp
  8. Egg : 3
  9. Soy Sauce : 1 T- Sp
  10. Salt for taste
  11. Butter/oil : 3 Tbl- Sp
  12. Vinegar : ¼ T- Sp


  • Soak the rice for about 20 minutes.
  • In a pressure cooker add the soaked rice, butter and enough salt and let it cook for 1 whistle.
  • Once the pressure released, open the lid and transfer the cooked rice into a tray/ wide plate. let it cool completely and keep it in the fridge for ~ 12 Hours
  • Marinate the chicken with ingredients mentioned (except oil) .keep this for minimum an hour. (normally I marinate the chicken with ginger garlic ,pepper and salt and keep it overnight in the fridge and next day will add the egg, sauces, cornflour and plain flour and mix it and rest it again in the fridge for about 2 hours).
  • Cut the spring onion white and green parts separate and keep it.
  • Heat oil in a pan and deep fry the chicken until brown.
  • Heat butter/oil in a pan /wok and fry the chopped ginger and garlic till slightly brown.
  • Then add the chopped onion along with the white parts of the spring onion until translucent.
  • Add the carrot and bell pepper with a little salt and fry it for about 2 minutes; move this mixture into one side and add the eggs and scramble it .
  • Then add the fried chicken and mix everything.
  • Add the soy sauce along with chilli garlic sauce, vinegar and pepper powde;, give a nice stir .
  • Add the cooked rice and mix it, check the salt and add if needed. Check the taste and if needed add the sauces and pepper powder.
  • Finally add the spring onion greens and take it out.


Tips :-

  • Can adjust the sauces according to personal taste.
  • While cooking the fried rice, the heat should be in high flame.
  • It is very important to cook the rice one day before for fried rice, otherwise 3-4 hours resting time. Don’t use hot rice for fried rice.
  • Cut the chicken into strips. I always use thigh meat for fried rice, it will give the chicken more, juicy and flavor.
