Chicken Bell-pepper Roast

A custom recipe -with an international touch- from my kitchen !!!. This preparation uses marinated chicken with bell pepper (capsicum) and soy sauce as its main ingredients. The rich presence of bell pepper makes this dish more nutritious as the bell pepper is a known source of vitamins and antioxidants. In addition, bell pepper gives an attractive aroma.

Ingredients:

  1. Chicken  : 2 lb
  2.  Onion (സവോള ) : 2 (Big)
  3. Bell pepper (capsicum) : 2 (Big)
  4. Spring Onion:  1 bunch (5 stems)
  5. Corn flour:  1 Tbl – Sp
  6. Chilly powder: 1.5  Tbl – Sp(Adjust)
  7. Pepper powder: 2 TSp (T- Sp)
  8. Turmeric : ½ TSp
  9. Soya sauce: 1.5TSp (Adjust)
  10. Chilly sauce : 1 T- Sp (Adjust)
  11. Chopped Ginger: 1 TSp
  12. Chopped Garlic: 1 Tbl – Sp
  13. Salt to taste
  14. Vegetable Oil:  2 Tbl – Sp( Adjust)

Method

  • Marinate the chicken with turmeric powder , chilly powder, pepper powder and salt ,rest it for minimum 1 hour. (I kept the chicken overnight  into the fridge).
  • cut the spring onions white parts into small pieces.
  • Cut the bell-pepper and onion in cubes and spring onion green parts in 1 inch long size.
  • Heat oil in wide pan( preferably nonstick)
  • Add the marinated chicken with corn flour & fry it for ~10 mts in high flame. Stir it continuously to avoid sticking in the pan.
  •  Then add the chopped ginger ,garlic and stir it about another 10 minutes during this time the chicken will cook and , almost change the color into light brown. (Add oil if needed while stirring)
  • Add soya sauce, chilly sauce  and fry it for another 3 mts.
  • Add the chopped onion, white parts of the spring onion and  salt , fry it  for about 2 minutes in high flame.
  • Then add  the bell-pepper and sauté it for about  2- minutes.
  • Finally add the green parts of the spring onion, and give a good sauté  in high  flame and switch off the stove.

Tips:-

  • Do not add water.
  • Oil, spices and salt can be adjusted to individuals taste.
  • Do not cover the pan for the entire cooking.
  • Soya sauce has salt by its own so adjust the salt level accordingly
