Another Puttu (പുട്ട്)/Steam cake recipe from Kerala Cuisione, this time layered with coconut rich chemmeen/Shrimp masala as for layering.  With the blend of fish peera masala ( a preparation of fish grated coconut)  with the authentic style Puttu, this preparation is a perfect choice for an one dish meal, either for the family or even for gathering dinners.

Iingredients

For Shrimp/Chemmeen masala:-

  1. Shrimp                : 1 Lb
  2. Chopped Onion                : 3 (medium)
  3. Chopped green chilli : 3
  4. Crushed ginger & garlic : 1 Tbl Sp
  5. Grated Coconut : 1.5 Cup
  6. Turmeric powder : ¼ T-sp
  7. Chilly powder : 1 Tbl-sp
  8. Pepper powder : 1 T- Sp
  9. Oil : 1 Tbl _ Sp
  10. Curry leaves
  11. Salt for taste
  12. Garam Masala : ½ T- Sp

For Puttu:-

  1. Rice flour/puttu podi : 3 Cup
  2. Water
  3. Salt for taste
  4. Grated Coconut : 2 Cup(Adjust)

Method

For Masala

  • In a pan add shrimp along with a pinch of turmeric powder, salt, ¼ cup of water and ¼ T-sp of garlic paste.
  • With the lid-on, cook it until soft (~10 to 12 min), if any extra water, dry it keeping the lid off.
  • Heat oil in a pan and sauté onion along with ginger garlic ,some salt and green chilli, until the onion became translucent.
  • Then add chilli powder, pepper powder and turmeric powder; fry it for a minute .
  • Add the cooked shrimp and grated coconut; close the lid and cook it for about 3-4 minutes.
  • Finally add the curry leaves, garam masala and mix it well; turn of the stove.

For puttu

  • In a wide vessel, add the rice flour along with salt and 1.5 cup of coconut and mix it.
  • Sprinkle water a little at a time and make a moistened puttu podi , it should looks like bread crumbs.
  • Boil water in a puttu maker/pressure cooker.
  • Meantime in the puttu cylinder add some coconut then chemmeen masala and rice flour mix repeating the same as you like for layers.
  • Put the lid and keep the cylinder in the puttu maker ( I used the pressure cooker puttu maker ,keeping the puttu maker in the stem of the pressure cooker)
  • Steam until the rice flour is fully cooked (typically 1-2 min after you start seeing the steam coming out through the top of the puttu cylinder).
