Brocoli Carrot Thoran

A healthy blend of two wonderful vegetables, prepared in Kerala side dish style. Finely chopped carrot and broccoli is cooked with masala prepared of grated coconut. I prefer this preparation for my family, as a tasty alternative for consuming Brocolli in Kerala style.

Ingredients

  1. Carrot                :   200 gms
  2. Broccoli             :  200 gms
  3. Onion                 :   1 (big)
  4. Green chilli      : 5 (Adjust)
  5. Coconut            : 2 Cup (Adjust)
  6. Turmeric powder : ½ T –sp
  7. Garlic cloves   : 2
  8. Jeera                  :  ¼ T – Sp
  9. Mustard seeds :  ½ T -Sp
  10. Urud dal          : 2 T- Sp
  11. Whole red chilli  : 3
  12. Curry leaves
  13. Oil                    :   5 Tbl –Sp (Adjust)
  14. Salt for taste

Method

  • Chop the carrot and broccoli to fine size pieces (May use a food chopper for getting perfect size). Mix both well and keep aside.
  • Finely chop the onion.
  • In a mixer add the coconut, green chilli, geera, garlic along with turmeric powder and make a dry and coarse masala mixture.
  • Heat a pan and pour the oil, add the mustard seeds and let it splutter.
  • Add urud dal and fry it until it turn brown followed by whole red chilli and curry leaves.
  • Then add the chopped onion and sauté it until translucent.
  • Add the coconut mixture and sauté it for about a minute.
  • Add the carrot and broccoli along with enough salt.
  • Sauté it until cooked (still crispy).

Tips:-

  • Don’t close the pan for the entire cooking.
  • After adding the carrot and broccoli the typical cooking time is about 5 minutes in medium flame
