A popular Indian chat recipe, Boondi (Boondhi) Raita is a delicious blend of sour, crispiness and chilli-spice. Boondi the small fried basen flour balls can be easily made at home following the steps given in this recipe or can be bought from most of Indian grocery/sweet stores.  You can quickly make this kids friendly dish at home if you can keep a stock of bondies.

 

Ingredients

  1. Besan (kadala mavu) : ½ Cup
  2. Turmeric powder : A pinch
  3. Oil : 1 T-sp
  4. Salt for taste
  5. Water for making the batter
  6. Oil for frying

For raitha:-

  1. Curd / yoghurt : 1 ½ – 2 Cups
  2. Chilli powder : ½ T-sp adjust
  3. Salt for taste
  4. Asafetida : A dash (pinch)

Method

  • In a bowl add the besan, salt and turmeric powder along with oil
  • Add a little water at a time and make a batter that flows. (The consistency can be decided with a simple test. The batter should flow through the holes of the spatula on a medium speed. If it flows too fast, then the batter is too thin and if it won’t fall, then the batter is too thick).
  • Once the batter is made, drop it on to the spatula with holes that is held on top of the hot oil and allow dripping into the oil. Don’t overcrowd the pan.
  • Fry till crispy. Drain it onto a paper towel. Repeat the process to finish the whole batter.
  • In a bowl add the yoghurt and whisk to get a smooth consistency.
  • Then add the asafetida powder, chilli powder and salt.
  • Mix everything together, add the fried boondies and mix it.
