Kara-Sev

Kara Sev (Kara Seva) is a spicy-hot variant of the kerala snack dish, madhura seva (മധുര സേവ). Kara Sev, where “Kara” denotes “heat /spicy” in Tamil and “Sev” is referres to fried noodles made from flour. The spice-heat in this dish comes from Pepper which is the key ingredient, along with besan and rice flours. Kara Seva is generally made during festivals, but can also be enjoyed as a tea time snack, as it goes well with milk-tea similar to Kerala mixture.
